Chase the Spirits
Paso’s ability to produce award winning wines has given rise to a new industry, “Craft Distillation”. Through our community’s passion and conviction towards earth preservation and sustainability the art of distillation was given way. In an effort to minimize waste, vineyard owners began to take what would have been discarded grapes and began distilling high quality, uniquely crafted spirits such as grappa, vodka and brandy. A handful of wineries launched their distilleries along side their winery. Some of these include ReFined a brother to Villicana Winery. Krobar Distillery producing on site of Barton Family Wine’s tasting room distills grape-based brandy, herbaceous gin, and wine aperitifs, and has now moved outside of their wine roots into producing rye whiskey and gin aged in rye whiskey barrel. Soon a larger player joined the ranks; Opolo, now crafting Bartlett Pear Brandy and Walnut Brandy. As the craft has grown, others have risen independently and stand out on their own making rank on to the Paso Robles “Distillery Trail”. Such include Azeo, Bethel Rd, Calwise, Central Coast Distillery, Re:Find, Wine Shine, and more. Allow us to escort you to some of our regions finest.
